cycling recipes - farfalle pasta

To celebrate the 2015 Giro D'Italia, we've put this great recipe together for our readers. It'll help you load up the carbs, and it's very quick and easy to make. You can choose your own favourite meat: Ham (English or Parma!), chicken or Italian sausage, along with a few other additions.

Serves: Four

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Not suitable for home freezing. Quantities given are adaptable for personal preferences.


  1. 250 grammes or 8 oz of dried Farfalle pasta , or double if fresh pasta
  2. Olive oil
  3. 1 x small onion - chopped
  4. 4 x sliced mushrooms
  5. 1 x red pepper, cored and seeded and cut into strips
  6. 125 grammes (4 oz) of broccoli
  7. 4 x slices of cooked ham, cut into strips, or 2 x chicken breasts cut into strips
  8. 50 grammes of frozen peas
  9. 300ml of creme fraiche
  10. Salt & pepper to taste


  1. Cook the pasta according to packet instructions
  2. Meanwhile, heat the oil in a pan, and add the chopped onion and gently fry for 2 minutes.
  3. Add the sliced chicken breast (if chosen) and cook through until lightly browned.
  4. Add the red pepper, broccoli florets, mushrooms, cooked peas and any other chosen vegetables.
  5. Cook gently until the vegetables are done but still crisp.
  6. If using ham, add the ham at this stage and warm through.
  7. Stir in the creme fraiche and add salt and pepper to taste.
  8. Drain the Farfalle, add it to the mix and heat through.
  9. Serve with Parmesan Cheese and Itaian bread.
